Have a great Thanksgiving everyone and cherish the moments you have with people: I have two close friends that just recently lost key pieces to their family and they’re struggling going into Thanksgiving this week. A reminder of how much we should value opportunity to be with family when we get it. If anyone in this group is facing the holiday without people, I hope you find a place of peace and their memory brings more smiles than sadness.

I'm thankful for this place because of the people here.

I'm also cooking the Alton Brown roast turkey.
Son-in-law has done a spatchcock smoked turkey the past couple years
He and my daughters and his mother are taking care of the rest.

I am fully stocked on beer & wine!

Hosting 26 people at the house on Thursday, the largest we've ever done.  Luckily the weather looks good so we'll be able to use the back patio.

1 BBQ turkey
1 deep-fried turkey
1 smoked ham
Giblet gravy
Cornbread dressing
Homemade rolls
Mashed potatoes
Candied yams
Gruyere mac n cheese
Fresh snapped green bean casserole
Cranberry sauce
Pumpkin pie
Pecan pie
Sweet potato pie
Homemade ice cream
Homemade whipped cream

I think that's it.

I also bought about 12 bottles of wine, my (grown) nephews are notorious for showing up to holidays and forgetting to BYOB...

Spatchcocking is easy.  It's what I do for smoked birds.  It doesn't change the flavor or anything, just cooks faster and more evenly between the light and dark meat.

Toughest part is getting the backbone out.  A set of heavy duty kitchen shears is mandatory.  Or, there's a guy on surlyhorns, who uses his reciprocating saw...

I'm feeling extra thankful this year, for obvious reasons.  

Thankful for lots of things, and people.  Among them:  this place--a thing--where I can goof off at work during down time with y'all--people!

I used to think this place wouldn't have as much value to me if I didn't love college football.  Over the years as the sport changed and my interest wanes, I now realize that's not true.  Turns out, for some reason, I just like talking to you goobers, about whatever.

We're hosting two waves: a small gathering of 10, with the elderly involved, then a second wave of the eldest's bf, and the boy's gf and her parents, who, like us, will be escaping some traditional Thanksgiving family tensions.

As for some minor thanksgivings, (1) I'm not starting a trial on Monday (settled), which has made for a much nicer November; (2) I'm grateful that youse guys here--particularly 847 and MikeDeTiger--seem to be in good health, (3) grateful that my kids are here for the holiday, even if it's really because they want to see their BF and GF, respectively, and (4) that I've wandered my way back here and that that dumpster fire of a political thread has been relegated to the trash heap. Oh, and that I have at least a little hope going into the Border Battle that I may be able to talk some smack to SFGopher when it is done.

It's definitely the best.  Also, probably the most expensive, because Gruyere cheese is pretty darn pricey.  This big dish of it, is probably around $40.  But it was our choice to add it and my 16yo son is making it because it's his fave and he learned how to make it last year.

Mastro's Ocean Club near us has a lobster mac & cheese as one of their sides, that might exceed this one in cost :57:

We have a recipe from one of my buddy's former coworkers. It's this Ina Garten recipe (https://www.foodnetwork.com/recipes/ina-garten/grown-up-mac-and-cheese-recipe-1937496) but with some changes like adding in some sauteed mushrooms, using panko bread crumbs fried in a little garlic & oil, etc... But it's Gruyere, Roquefort, and Cheddar.

I'm thankful I can enjoy Christmas the same way I do Thanksgiving

I don't worry much about the birthday for a deity, or a made-up fat guy from the north pole wearing Husker RED, I don't do much running around spending money.
 Just eat and fellowship and watch football.

I think I've talked about this... My sister's in-laws had a long-standing tradition of a "gratitude journal". Every year on Thanksgiving, anyone who is together with them celebrating is expected to write in it, expressing what they're thankful for that year. 

When I met my wife (2016), we started doing that as well. This will now be our 10th Thanksgiving together, so we've amassed 9 years of entries into the journal and will have our 10th tomorrow. 

It's great fun, because each year you can look at the previous years, reminisce about the good times with whoever was there to celebrate, look over the years at how people (particularly kids) have changed and grown, etc... I recommend it for pretty much anyone, but especially for those of you who still have kids at home, or are into the stage of life where you're celebrating with your kids and their kids... 

So I realize it's probably a little late in the game, but if you want to introduce a new tradition for whoever you're with tomorrow, there's still time to run out to a store and get a blank journal...

I'm with OAM... I like them both, but when we get into Christmas, it's a lot of rigamarole when you get all the presents and everything involved that I'd rather avoid that. Other than presents, I see them pretty equally... Get family / friends / etc together, enjoy each others' company, eat some good food, etc. 

It doesn't help that I'm basically impossible to buy presents for, because I buy everything I need, and I want very little beyond that.

We don't do a lot with gifts at Christmas - a couple inexpensive items that are about the thought

now my brother's house on the other hand - Whoa, Nellie!  I just sit back and drink while that goes on and on.  I gift each of them a gift card.

I'd be all alone in a very big building.  
Plus it makes up for all the times I go in an hour early and stay 2 hours late.  We teachers get a lot of time off, but if you want to add up our hours of work, that time goes *poof*, I assure you.

I also buy gifts for folks year around when I see something.  It's just that about September, I simply hold those gifts for the calendar.

Kids are finally back from various activities and work (my son had his first day working at Cane's chicken!), and now we're gonna watch Planes, Trains & Automobiles and eat pizza, as is our tradition.

Kids are finally back from various activities and work (my son had his first day working at Cane's chicken!), and now we're gonna watch Planes, Trains & Automobiles and eat pizza, as is our tradition.

Enjoying my off week at Dad's in mild-weathered Tucson.

Yesterday I took my Dad and brother to the Tucson Military Vehicle Museum (https://www.tucsonmilitaryvehicle.org/), a new museum opened as nearby attachment to Tucson's more famous Air & Space Museum and Aircraft Boneyard. There was an option to hire a tour guide but it was meant for larger groups than us three. Fortunately for us, my youngest brother is an Army Vet with training on several featured tanks and, while deployed to Afghanistan, experience driving several of the modified Humvee versions on display.

Here my brother is detailing to us the design features of Centurian Battle Tank, introduced by the British Army in 1945. This turret side-hatch, he tells us, is important to this day for receiving your order of Gorditas and Crunchwrap Supremes whenever you take your Centurian through the Taco Bell drive-thru.

Spatchcocking is easy.  It's what I do for smoked birds.  It doesn't change the flavor or anything, just cooks faster and more evenly between the light and dark meat.

Toughest part is getting the backbone out.  A set of heavy duty kitchen shears is mandatory.  Or, there's a guy on surlyhorns, who uses his reciprocating saw...

Different Thanksgiving this year for me, My daughter cooked her first family thanksgiving dinner.  She had her family, one of her sisters families, and the wife and I over. It was nice not having out house destroyed. LOL. The torch has finally passed.

My wife bought a turkey breast a while back from Trader Joe's and froze it.  It turned out nicely, I over baked to 162°F internal and let it rest a bit.  We were really hungry by that time.  I sauteed some yellow and green squash and she made stuffing, which was just "OK".  She heated microwave mashed potatoes.  We have a lot left.

We had a bottle of Nicolas Feuilatte which is nice.

I didn't nap though I read some books on the couch.  The weather here is sunny which is always nice, but chilly.

Thanx for that "evidence" I told cindy yesterday to not let it go over 155°F Got a new roaster about 5 yrs back and it's really old and very thick.Actually a garage sale find that hadn't/hardly been used - steel with an enamel coating. Any ways it retains heat better and it cooks quicker we've noticed. I have a thermo-pop instant read and it is good/accurate and i open the oven every 30-45 min. to baste the bird. So I popped open the door after 2hr 45 min. and it browned nice and stuck the thermometer in (3 places) and it read 190°F. She wanted to look any way and I said no it was DONE - but she had to check and confirmed my findings.

I told her to check Serious Eats/Alton Brown/Test Kitchen - cook to 150°F and pull it will cook up to 160°F. As it turns out thanx to the time tested gravy made with the giblets and drippings/juices from the pan - it was good.Tomorrow she will take the rest of the meat and into the food processor and make a helluva turkey salad - with relish. As good as any ham or tuna salad IMHO 😎

For me, they're the same thing.  I think my southern family members call it dressing.  But for me, that also means dressing is what they make from scratch vs Stove Top stuffing, which I prefer.

Dressing can be good, but especially as a kid, Stove Top was GREAT.  

Are they synonymous for you guys?  Different/Separate??

Stuffing technically gets stuffed into the bird's cavity and baked at the same time as the bird itself.  While dressing is baked in its own separate dish.

But most people I know use the terms interchangeably.

I'm not a fan of Stovetop stuffing, mainly because I was raised on my grandma's scratch-made cornbread dressing which is now my mom's main contribution.  Anything else, just doesn't taste right, to me.
