Another Friday night game tonight, and a decent one in Wiscy-Purdue. The wife is taking the girls to taekwondo for two hours, it's a beautiful Friday night in Columbus, and I'll be on the couch watching the Fighting Fickells.

Tomorrow the neighbors want to have a Thing for the game, so dutifully we must attend. The neighbors have a good house for entertaining, but are usually serving grilled chicken breast or cauliflower sticks or some other nonsense. I won't be suckered again. I'm making a brisket tomorrow, but for the "appetizer" I'm bringing I'll probably make brisket sliders. And some taco dip. I'm not getting drunk, perhaps watching my team lose, then eating health food.

Chuck roast with 1 packet onion soup mix, 1 tbsp ranch dressing seasoning mix, 1 stick butter, a bunch of pepperoncini, and S&P. Low 7-8 hours until tender, then shred. 

Simple and delicious.

Anyone ever baked sliders before? Saw a couple recipes of basically making the sliders and baking them in the oven. Never done that before, wanted to make sure it's legit. I'm sure it's fine, but my first instinct would be to cover them in foil and bake them, but maybe that makes them too soggy

I don't believe the amount of people here that have not heard of Mississippi pot roast.

This place has always been a collective of great recipes, from complex to simple.

I'm glad that Purdue and their 17th straight ass whooping to Wisconsin has brought everyone together to share this recipe.

Ya my ribs come out great in the crock with nothing wet added and render out quite a bit,take a baster and remove 2/3ds of the juice about 3hrs in and some bark forms on them the last 2 hrs - BTW thanx

Yep. Same thing when you're doing pulled pork in the crock. No added moisture needed--plenty already in the meat.

Oh, you didn't say you were starting with smoked brisket! I thought you were talking about ground beef "burger" patties and baking the whole thing in the oven. Which IMHO wouldn't work and would be horrific. 

Yeah, when you're starting with smoked brisket, you're looking to melt some cheese and warm the brisket, no big deal. Not much different from the brisket grilled cheese we do...

You're gonna be fine. And no, don't foil them. If you trap the steam you'll make them mushy.

Waking up in the Central Texas town of Elgin. The G in Elgin pronounced as in Gun, not the drink Gin. Population up from 4k in the 90s to over 9k thanks to Austin’s encroaching sprawl.

Last night we attended a Homecoming high school football game – Elgin Wildcats Vs Pfugerville Connally Cougars. The Elgin defensive coordinator lurked the sideline wearing a Cowboy hat.

Happened to meet the High School’s athletic director while visiting Elgin’s museum earlier in the day. He was returning a yearbook from 1914 that he was copying historical photos from for Homecoming posters. He was dressed in the school colors, and Main Street is decked out in purple as well.

All in all a fitting day since Elgin, along with nearby Coupland TX is one of the two towns outside of Austin where the 1999 High School Football film Varsity Blues was filmed. Among other movies to include Walking Dead, Chainsaw Massacre, and Gilbert Grape.

It’s early, and we’ll need the sooner start to make the hour or so drive into @Gigem (https://www.cfb51.com/index.php?action=profile;u=1706)’s territory, to College Station for the 11AM Texas A&M kickoff Vs Auburn. This year my annual Auburn game will also count as my first Aggies game.

Historically Wisconsin has always been a high class program.

I should have elaborated, as Wisconsin just replaced the coaching staff.  I was speaking more towards Fickell and his staff.

I'm not too familiar with Fickell, but it seemed low class to me to go for 2 there.  I can't find a reason they would need it.

Also there was a lot of vodka involved.

That confused me just as much as it confused you. I put some feelers out on the homer boards to see if anyone asked about it. I don't know why you'd do that in that situation, unless the kicker was hurt??

I've also not heard anything bad about Fickell.

Quite a bit. Gives it a nice little tang of flavor, and a mild heat. Not enough to be "spicy", of course. It won't bother someone with a low tolerance for spice. 

We've been making this recipe for years... It's a go-to when the weather gets cooler and the kids are here.

Tonight will be Colombian style asado pork chops and grilled corn with cilantro butter. 

The pork chop recipe is from Milk Street magazine. Really solid magazine if you're looking for recipes with a global flair. 

It'll be our first time trying these chops though. They'll marinade all day in a paste of spices, sugar, a little vinegar and oil, and then go on the grill.

I make a variation of it (there are hundreds/thousands).

I sear the beef first. Then I let the beef cook with beef stock, the onion soup mix, oregano, black pepper, and red chili flakes.

At the end (30 minutes to go) I shred and add giardiniera. 

Beef sammitch!!

I'm not that serious of a foodie but based on Kimball's earlier efforts I'm sure it's solid. I stick to Cook's Country basics. Just had the sunnyside up Eggs w/toasted rye from the local bakery and crazy at it sounds a Kosher Dill on the side

Sounds delicious. I might have to give that a shot. 

We usually don't cube or sear the beef. This time, that was a bit of a mistake. One section of the roast remained tough a lot longer than the rest, so I had to cook longer than expected, which meant a portion got a little over. I think cubing it and searing it would have given that portion more surface area and it would have gotten tender more evenly. 

brines and marinades are great for white meats.

one thing though that I tire of is my wife using this 'oil' heavy marinade for her chicken.    the burn on it off the grill is acrid and is really hard to burn off that residue.

Yeah, I usually use grapeseed oil and John Henry's Texas Chicken Tickler rub on chicken. But I don't "grill" chicken, I roast it [indirect] on the grill. So I don't really have to worry about char. But I make chicken so rarely with my wife's poultry allergy. Usually only when the kids are here and she has plans, or when we're cooking something that we think the two of us and my oldest (and maybe youngest) will eat but need chicken for the one (or two) other kids...

These chops will be interesting, with both oil and brown sugar in the paste. You're supposed to put the chops on direct heat w/o removing any of the paste, and it's supposed to get some char. So we'll have to see how it turns out.

Need I remind you that the last time a Badger team went for two, they didn't convert one the rest of the season, including one that would have tied the Rose Bowl.

McAfee was once funny when he was still a kicker and falling drunk into fountains in Indy.  He had a legit funny streak of appearances.  He's quickly become a parody.   An extremely well paid act now.

Myles Hinton sucks….I have no idea how he was a 5* coming out of HS. They rank these OL recruits just based on size, length, frame, and how they look in drills at t-shirt camps. The kid looks like a 1st rd NFL pick in a uniform in warm ups. But he just kinda sucks at actually playing the game. 

I don’t get why they continue to start him at RT….

Henderson started at LT and Barnhart at RT.  Not sure why they put Hinton in at RT?  Must be someone’s pet project.  Not seeing it from Hinton on the field.

Need I remind you that the last time a Badger team went for two, they didn't convert one the rest of the season, including one that would have tied the Rose Bowl.
I remember Bert going for two against Punky. That was more of a Bert/Punky thing.

I'd like to get something like that. Exposure to the channels is to the South, but my TV's are all on the North side of my house.

That's what I saw when I was looking - Tablo. Any experience with it?

My router is very strong now with the new fiber - I was able to take out all of my extenders and even the pool equipment on the South side works wireless through a concrete wall!!

Waking up in the Central Texas town of Elgin. The G in Elgin pronounced as in Gun, not the drink Gin. Population up from 4k in the 90s to over 9k thanks to Austin’s encroaching sprawl.

Last night we attended a Homecoming high school football game – Elgin Wildcats Vs Pfugerville Connally Cougars. The Elgin defensive coordinator lurked the sideline wearing a Cowboy hat.

Happened to meet the High School’s athletic director while visiting Elgin’s museum earlier in the day. He was returning a yearbook from 1914 that he was copying historical photos from for Homecoming posters. He was dressed in the school colors, and Main Street is decked out in purple as well.

All in all a fitting day since Elgin, along with nearby Coupland TX is one of the two towns outside of Austin where the 1999 High School Football film Varsity Blues was filmed. Among other movies to include Walking Dead, Chainsaw Massacre, and Gilbert Grape.

It’s early, and we’ll need the sooner start to make the hour or so drive into @Gigem (https://www.cfb51.com/index.php?action=profile;u=1706)’s territory, to College Station for the 11AM Texas A&M kickoff Vs Auburn. This year my annual Auburn game will also count as my first Aggies game.

that last drive McCord made four clutch, big time throws. You can’t teach guts, - extreme pressure in a hostile environment:

3rd and 10 - 23 yards to Egbuka
4th and 7 - 7 yards to Fleming
2nd and 10 - 19 yards to MHJ
3rd and 19 - 21 yards to Egbuka
All of these were high pressure throws, three of them were in tight windows. (Great catches by the receivers too) Ice water in the veins. He will be good.

ND is a damn good team, was really impressed with Ohio State going in there and winning on the road, at night. McCord didn't play particularly great, and he really should've thrown the game losing INT on the final drive if not for that ND DB having butterfingers- but he never flinched and didn't turtle after dodging that bullet- and he made some clutch throws to put them in position to score the go ahead TD.

That final game in Nov is gonna be a battle.

Yeah- that was not an easy accomplishment. Tough team in a tough environment. 

He damn near throw a pick.  But then again he threw a beautiful TD ball to Egbuka that he dropped. Plus- their best drive ( besides the game winner) they shot themselves in the foot with a stupid personal foul by Fryar- after a beautiful throw by MCCord to get a first down in the red zone.  Heck of a game though

Forgot to take a picture of the pork chops last night... But they were really effing good.
You can make up for it by photographing that swineapple that you are going to be making this week.

It's interesting to me to watch how far a team like ND can drop in the rankings for such a last second close loss.

I figure they are really close to as good as Ohio State.
