Freddy's Fig Cake

1 large egg
4 tbsp. sugar
1/2 tsp. baking soda
1 tsp. baking powder
1/3 cup cooking oil       *** calls for 1/2 cup but 1/3 works better for me
1 cup + 3 tbsp. flour
1 pint chopped figs



Mix egg and sugar, then oil and other ingredients.  Bake at ~350 12 minutes in a convection oven or probably more like 20-25 minutes in a regular oven.  

This for a 9x9 pan.  Adjust appropriately if you're gonna do a different size.

Maybe this is silly and implied, but I don't think I've ever had store-bought figs, so I'm kinda ignorant.  When I say a pint of chopped figs, I'm talking about canned figs, not just chopped up raw figs.  I don't know if you can get regular figs in the fruit section of a store or canned figs on the shelf.  Probably the only figs I've ever had come from my grandpa's or my dad's trees.  

I can't vouch for the quality of store bought canned figs if such a thing exists.  Mine come from my dad, he does all the canning, and even if you don't wanna make a cake, canned figs are glorious over biscuits for breakfast.  I guess I could ask him what his process is.....maybe that could vary and storebought could really suck.  I dunno.  I know it's easy enough to DIY if you get some figs, and it keeps forever.

Today on TBT telework cook like momma did in the '70s day, I'm making Cheeseburger Hamburger Helper, Trappey's Lima Beans from the can, HEB croissant rolls that comes in a tube like biscuits and a frozen Key Lime Pie.

Well why post a recipe if the main ingredient is something that people might or might not be able to obtain?  Seems a little cruel to me.  


Slick-- do you do jello molds?  They weren't part of our regular rotation for weeknight dinners, but if the folks were throwing a dinner party back in the 70s/early 80s, you better believe there was gonna be a jello mold involved.

There have always been canned figs available to people in the places I've lived.  Canning figs is really, really common around here.  I just don't know if it's something you can buy or something you have to do.  I'm assuming you can at least get raw figs from a grocer somewhere.  If you can't buy canned figs, or buying canned figs sucks, then get some figs and I'll ask my dad how he cans them.
Or hell, failing that--I mean, you're talking to a Louisianan, and we're nothing if not hospitable and helpful--I'll just send a can of figs.  I mail my former pastor's wife in Austin Mayhaw jelly from Starks, LA, every year, might as well add canned figs to the list.

An ex of mine posted on FB that she really needed somebody to stain her pergola.
Naturally, I grinned like an ape and studied the words carefully for several minutes to savor the full import of her salacious innuendo.
Eventually, I concluded she really wanted somebody to truly stain her actual pergola.  
Color me disappointed.  Pergola sounds so naughty.

Really appreciate this Mike.  Not sure when I can make it for her, as she's not up to eating anything like this at the moment, but as soon as she is, I'll give it a shot.

And, on the freshly canned vs stored bought canned vs fresh fig issue that came up, I think I can find either fresh figs or canned figs hereabouts, and I can can (although I don't think I can can-can, I'd need lessons at least) fresh figs, or at least I should be able to as I've canned plenty of fruit over the years (mostly pears - we had a mongo producing - as in several hundred per August on a good year - pear tree in our backyard back in Portland).  

Anyway, you've inspired me to go after this, and will shoot for around Tday weekend.  I'll send you a photo or two of how it came out when I do.
