I guess I would tire of bistro food at some point, it might be a while. There was a place in Copenhagen called Frenchy that was excellent.
In the US, French restaurants generally try to be high end something rather than bistro like. We have all sorts of ethnic cuisine near us and not a single bistro type place, not one. Modestly priced Thai, Korean, Mex, Greek, Japanese, Indian, Italian, Vietnamese, South American, Chinese, Persian ... zero French.
And of course there is soul, Southern, BBQ, etc.
