Utee called my "chili" Mexican spaghetti. There was a place in Chapel Hill that served chili over rice, I adopted the practice. I do put grated cheddar on top of it, so it is a bit like "Cincy chili", but it tastes a lot different, and it is red. Last night's was different because it included Brussel sprouts, or as I call them, "Shoes from Brussels".
Usually my "chili" or whatever is a concoction of onion/garlic/ground beef sauteed with diced tomatoes added later with chili powder. I had some celery in it this time also, sometimes I'll add green Bell peppers. My wife does NOT like spicy foods, so I go easy on the powder. It's close to my spaghetti sauce.
