Making chili again for two friends visiting from France.  Simple enough...

top sirloin - trimmed and diced and browned.

Then dice vegies, onion, green onion, garlic, bell pepper, celery, and brown with meat.  Add three cans diced tomatoes, salt, pepper, some Italian mix, and chili powder, simmer 3 hours.

I provide the option to serve over rice and have shredded cheddar and sour cream available.

I would enjoy it

I'd add the shredded cheese, not the sour cream or rice

Shredded cheese, diced raw onion, chopped jalapenos, chopped cilantro.  All are acceptable toppings.

Bell pepper and celery are more like... gumbo I guess.

A little diced tomato is okay, 3 cans seems like a lot.

Chili powder good, but it should definitely have comino and maybe some Mexican oregano in the flavor profile.
