 No. From what I've read, they are high quality, but you'll still want cast iron or regular steel for good sears.

Thanks! My wife keeps saying that next time we go to Tuscany she wants to rent a villa and have some Italian nonna come and teach us to cook. 

I doubt *that* will happen, but this is certainly something we might be able to put into the schedule...

On that front, I picked up this book back in the fall when the 30th anniversary edition was released:

Essentials of Classic Italian Cooking

It's largely described as the Italian analog to Julia's Mastering the Art of French Cooking

I think we've only made a few things out of it, but if you're looking to do some Italian cooking, it's a damn good start.

Yep, she does one day classes. When we went, we learned pasta. Squid ink was fun - actually harvesting the ink even.
