I made the BBQ duck enchiladas again for my family's annual Enchilada-off a couple of weeks ago.  Competition was super-fierce.  My nephew made some smoked beef tenderloin enchiladas that were really special, but I think my dad regained the crown with his pecan-smoked pulled pork stacked enchiladas West-Texas style.  Those were really pretty freaking awesome.

So the kitchen at the Resident Genius World Headquarters produced this batch of croissants and cinnamon rolls last week...

These are both Zingerman's Bakehouse recipes that we got through virtual classes. The cinnamon roll one is shorter than the croissants, but both are quite long and detailed. I can try to tap them out here, but I'm not sure if I could get away with it.

probably just way too large and complicated to share on this forum

I know, right?  Nevermind the scores of pages we've posted with very detailed recipes for BBQ duck enchiladas and whatnot...

My main concern with posting these recipes is not the complication thereof, it's the fact that the recipes aren't mine. Putting them out in this forum means that I can't guarantee that they'll only be for home use (this is what the disclaimer at the bottom of the packets state), and I don't want to have to deal with Zingerman's IP attorneys.
