I grew up thinking I hated Brussels sprouts because my mom never made them.  My mom never made them because my dad hated them.

Then one day in my 20s, some friends were having a dinner party and they served some Brussels sprouts trimmed, split, and roasted, with just some olive oil and salt and pepper.  I decided to be a big boy and tried them, and my goodness they were tasty.  Perfectly seasoned, crispy on the outside, and almost creamy on the inside.  I've been a huge fan ever since.

Oh, and nowadays I often make them as a side at Thanksgiving, and my dad has tried them, and discovered he actually loves them, too.

Texture is off-putting, as is the bitterness.
Roasting them or deep frying them tends to reduce that bitterness and let the natural sweetness emerge. It can also cause them to be a little more crispy, which I'm sure is part of the texture issue. 

That said, I'm not exactly a fair judge. I love bitterness. I was the weird kid who was excited when my mom made steamed Brussels sprouts--the method of prep that caused generations to hate them.

I grew Brussel Sprouts one year in my garden, they were superb, but the bugs found them and I only  got one harvest.  Cooked properly they are delicious IMHO and healthy.  I usually microwave them to almost cooked and then sautee them in a cast iron skillet with butter and a bit of vinegar.

Yesterday I had to get two pages notarized.  The lawyer tells me UPS does it, and indeed they do.  Schwab folks say they only do it for Schwab documents, which annoys me, so I trapse off to UPS, my wife is busy.  It's about a mile, a bit less.  It's busy, I wait, the dude charges me $20.  Well, OK I guess, no other viable option.

I decide to treat myself to a bar drink, somewhere, it's just after 4 PM, places have Happyish Hours.  I go to "Fado's Irish Bar", a place we had lunch once long ago, never back since, you can imagine the bar.

They have a Mule for $9 and fish and chips for $8, OK, whatever, the lady bartender makes the drink which is a bit odd but OK.  I'm the only customer there at that point though later a few groups drift in for an after work libation.  The F&C is pretty good, very hot and crispy, they do give a 10% discount to residents to offset our 8.9% tax (which ostensibly in part goes to "transit", somehow, though we don't see anything new).

They have four TVs in sight showing soccer and golf, OK fine, overall it was a decent experience.  It's a local chain, I guess overall decent.  I might go back and order something else, like a "corn beef roll" whatever that might be.  These "theme" bars don't generally do much for me, I suspect the put too much money into appearances and too little into food, but I guess that's par.

Fado is actually a national chain, though I think it's shrinking these days.  There was one in Austin for many years during the late 90s and early 2000s.  My first ever date with my i s c & a aggie wife was a meet-up at the Fado in Austin, back in 1997.  It finally closed in 2018 which was too bad, I always liked the place.

I remember a teacher in grade school made my brother eat a brussel sprout and he threw up on her. 

To this day I've never tried one.

Yeah, we had one in Chicago. I think it's still there, for now.

I was thinking to myself "isn't that a chain?"

Not sure I've ever been. I assume it basically falls into the "Generic Irish Pub" genre. 

Is there anything actually unique to it?

I strongly prefer local places, maybe a chain that has 4-5-6 locations.  I hadn't known this one was national, at least it's OK.

The "local" bar near me is the 11th Street Pub, which is where Sir Charles is known to show up late at night when he's in town.  We've gone there for lunch a few times, my wife is not a fan, but I rather liked it.  It's a few more blocks over from Fado's.  

Eleventh Street Pub

There is a new place that opened where I've seen lines to get admitted in the evening, with three security guards out front.  I don't get that at all, except the clientel seems to be 99% African American, and perhaps some pro athletes go there?  I've seen some other apparent "pros" waiting to get admitted.  Looks like this too is national.

Wicked Wolf - American Restaurant

Then there is a cigar bar, again catering to African Americans, very fancy inside, we haven't tried it.  Stuck our nose in after it opened, very upscale looking.

I would opine no, it's a "fake" Irish pub, which can be OK.

Not really.  It's pretty generic.  Lots of kitschy crap on the walls, lots of Gaelic phrases painted over doorways.  The one in Austin was quite large, probably 3x the size of a real pub, but they did have it walled off into little sections that made it seem more personal and intimate.  It also had a nice outdoor patio with a stage for live music, like every other place in Austin.

They knew how to pour a good pint of Guinness, and their pub food, while pretty standard fare, was tasty and well executed.
