Sure, fajitas are traditional for both Mexican and Tex-Mex. It's just grilled marinated skirt steak.

I love them but rarely order them out because they're so expensive.  They used to be super-cheap because it's a tough, stringy cut of meat.  It was poor-people food.  It has to be marinated and/or mechanically tenderized to make it edible.  Back in the 80s and even early 90s I could buy it for $.59/lb.  Now I'm lucky if I can find it on special for $8 or $9 per lb and that's at the carnicerias, the gringo grocery stores are a couple bucks more.  And ordering it already prepared at a restaurant?  Might be paying upward of $30 or $40 per lb.

Oh and because we excel at pedantry around here, there is no such thing as a chicken fajita or a shrimp fajita or even a ribeye fajita.  "Fajita" refers specifically to the cut of beef-- the skirt steak-- and not the preparation of tacos.

If you order a "chicken fajita" then you're actually eating tacos de pollo asado.

I like gringo places here, and I like the reverse as well, but they are a drive up the highway for us.

We both love dining outside, so the local gringo places work for us.  My wife orders fajitas nearly every time, I have no idea if that dish is "traditional", it's pretty simple really, I make it at home when we have the gozintas.  Our Kroger sells gozintas pretty much all the time fortunately.  Even in Cincinnati I could find them.


It is traditional at Chili's.

I blame Chili's for popularizing fajitas nationally to the point that the price escalated 15x over the past 30 years.  Bunch of assholes.

See, I learned what "fajita" means now.  My wife orders "chicken fajitas", which properly would be  tacos de pollo asado.

Our local favorite place serves enough for two, we usually have them again for dinner as I order something different.

Yeah they're fried in the final steps.

They're just beans that are cooked normally (usually pinto or black beans in Mexican and Tex-Mex), and then lightly fried in fat, and partially mashed with a fork or a potato masher.

They shouldn't "taste like mush" in fact they should be quite flavorful.  I usually cook mine in bacon grease to boost the flavor profile.  They might feel like mush, I guess.  They are mashed after all, intentionally.  The texture never bothered me but I grew up with them as a staple of course.
