I recall it was a nice lunch, I didn't think whatever I ordered was "fresh", though it could well have been.   They seem to dance around the term.  Fresh, to me, means never frozen, which means it had to be caught recently, within a few hours, locally.

Our menus are created daily to reflect the freshest seafood available. We are committed in offering only pristine & unique seafood from around the world coming from ecologically responsible fisheries who promote only sustainable seasonal or aqua cultured varieties. NONE of our seafood offerings are farm raised.

We literally search all over the world to find the freshest and most unique seafood available. All of our fish arrives each day by air, and is cut from whole fish in house.

There is zero chance they're flying in anything fresh from Europe, Canada, or the West Coast.  This isn't happening.  It's frozen.
My local fish monger also flies everything in Fresh, including Faroe Island Salmon, semi-daily. He says so long as it's 72 hours or less, it's fresh.

I've had my own fresh catches (grouper) last up to a week in my fridge (that's the longest I let it, and it was fine).

Don't know what more I can tell ya.

If fresh is so important, why not keep the fish alive until it is prepared, like they do with lobsters?

If you kept them sedated, they wouldn't need as much room to swim around.

I had a fish monger (a friend of mine) who used to go to the wholesale fish market near O'Hare every morning to pick up fresh, flown-in fish. The only thing that was not fresh were his crab legs, which are generally steamed and frozen at sea.

Man, he had some good stuff.

I'll fight anyone on this,   the best 'fresh fish' on the planet is the walleye or northern pike you catch in the morning and fry on the shore not even hours after catching, with a slice of raw onion, hot sauce on some crappy white bread for a sandwich.

I will have that, for a week straight coming up later this month.

Meanwhile, I have a freezer full of halibut we caught in Alaska last month.  it's still delicious ....after being thawed from its frozen state.

Sounds great.

I prefer catfish caught in a relative's pond, then fried out back later that day, with fries and hush puppies.

Speaking of famous higher end restaurants ... (not) ...this place was a treat when I was a kid.  Now it's over priced over greasy stuff.  I think they stick around based on tradition, not taste or value.  Disappointing (not my photo).
Yeah, my aunt said we HAVE to go there.
