if you're there for a week you should definitely rent a car.
Such a small island that you can travel to almost any city within 4 hrs. Flew into Catania, rented a car and was basically on the go non-stop for 10 days and flew back from Palermo.
Went to Catania, Taormina & Castelmola, Syracuse, Agrigento, Porto Palo, and Palermo. The fish market in Syracuse is insane. All kinds of fish everywhere that were just caught that morning. Raw fish everyone and not a hint of that nasty fish smell.
There's this little hotel/restaurant right on the beach in Porto Palo called Da Vittorio. Probably the best seafood pasta dish I've ever had in my life. And the lobster was amazing.
Interestingly enough, my former favorite restaurant here in town was Vittorio. Unfortunately Vittorio got divorced and the wife took it from him. She ran it down.

Stayed in Evian once, drove around the Alps, and Chamonix.

The more legit the Chinese joint, the less I like it.  
My tongue is 'Muricanized in that regard.  
I also frequent  (Cantonese, Sichuan and Huan styles, as well as Mandarin, which always confuses me, I don't what it means, other than 'not-Cantonese)) Chinese restaurant with a 'yellow' menu for natives, and then the 'white' menu for everybody else.  
There are some items on the 'yellow' menu that I like but its very much flavor, spice and texture profiles which are the biggest differences.

I like Florence a lot more than Rome. Rome was very busy and had lots of bustle. Florence was relaxed, extremely friendly and just loaded with stuff to do. We used it as a base from which to explore Tuscany. I could live in Tuscany. No doubt.

well you go to France quite a lot it sounds like. If you get the chance to go back to the French Alps in late spring or summer check out Annecy and rent a boat on the lake.
It's only like 25 miles from the Geneva Airport.

that's what a lot of people I know who have been to both say. I've yet to go to Florence unfortunately.
I'm a huge history buff, so Rome was pretty much candy for me.

Heck yes! Thanks. I know we are staying by the colosseum in Rome. A little more fuzzy on Paris. Looks like about a ten minute walk north of the Louvre

if you haven't already booked the place in Paris yet or can change, you might want to think about staying in Montmartre. Montmartre is the highest point in the city and the views you'll get of the city are unbelievable. The neighborhood is just gorgeous. The place I stayed at last time I was there was right next to the Sacred Heart basilica.
