My mom cooked most of our weekday meals. With three kids, simple, fast, and cheap were always her goals. She wasn't a gourmet chef but she managed to make a lot of meals that tasted good and filled us up. The recipes I grabbed from her were some of my favorites but they're by no means magazine-print-worthy.
My dad cooked more on weekends. Sunday breakfast before church was always a big deal-- migas or scrambled eggs with chorizo, home fries, homemade biscuits and gravy, with bacon or breakfast sausage or thick-cut fried ham. And of course lots of grilling and BBQ, and then his homemade enchiladas. Chili when it got cold, and chile relleno for special occasions, because they're a lot of work.
