This is making me think of all of the delicious burgers I’ve consumed where the bottom half of the bun it’s just overwhelmed soggy and falling apart

After a few days at the Grand Canyon and a few others at a cabin in the Pecos Wilderness in NM, I'm back in the south.  Gotta love the first gas/pee/food stop was at a gas station that offered a fried catfish dinner for $5.99 and had hot boiled peanuts!!!!

Back in the day, ground sirloin tasted like sirloin and was really good, you didn't need a bun.  I'm sure I could get some at the local butcher, I always forget to ask.

And yes, it would be $12 a pound probably.  

I still really like flatiron steak.  I wonder what that is like ground.

Yeah, I was thinking that, a good burger needs 20% fat or so.

Suet they call it at times?

The wife will often buy 92% lean ground beef and want me to grill them.  She forgets.

The beef names in France are very different, or some different, and she's never learned what they are here.  I admit it's confusing.  I usually buy the beef.  And pork.

The best burgers, in my experience, are equal parts brisket, skirt and ribeye.

Heading back to get the dog and head home in a bit here. Despite Hodad's for lunch yesterday I'll be making burgers tonight as well.

Last night had an excellent meal in Little Italy.

We had lunch at the Mukja Korean Fried Chicken place.  Yum.  Shawn, one of the owners, chatted with me a while about Korea (He's from LA Koreatown).

He says fried chicken in Korea is HUGE.  I had chicken and waffles, the waffles contained "stuff" including serano peppers.  He was telling me it would be a kind of pancaoke in Korea.  He said different parts of Korea might have more pork and seafood, but mainly it was chicken, fried.

It's really good.
