I'm no expert about the restaurant business, but I do know that if you have one ultra-successful place in mind to mimic and not accept that you'll probably have a joint more like the other 99.9%, you've deceived yourself and you'll fail. 

I'd much rather be knowledgeable and want to know the ins and outs of the 50th percentile restaurant over the 99th before I make any decision.
Yeah I'd agree with this. I think it's very hard to duplicate- but much easier feat to achieve if you're only doing like 1 or 2 more. 

I think where restaurants really go to shit is when they try to expand to any further than 3. It's so hard to keep quality and standards high at one.

I think eating even fresh food from vending machines is as common in Japan as fast food is here.  It could absolutely replace a lot of the bad food service infrastructure we have.

I assume school lunches have gotten worse as time has passed - as companies keep finding ways to provide worse barely acceptable for cheaper, while remaining legal.
This is what all of the pro-corporate guys here don't understand:  what I just said is the end game.  Finding ways to provide the least acceptable for cheaper, while remaining legal.  That's how it works, at least in this industry at this time.
But there is a second part of that. We give gov't power to define what a legal lunch is--but via regulatory capture you end up with the decisions of making the rules being corrupted by industry.

I find that for the pro-government folks, they assume that putting more decision-making power in the hands of government means that we'll get better decisions, in the best interests of the kids. 

But that usually doesn't happen. Voters want kids to have healthy lunches, but don't have the incentive or the time to actually base voting decisions on that matter, and very few elected officials are running on that platform anyway. But industry players have HUGE incentive to try to influence the process. 

It's the standard lobbying problem. Concentrated benefit but diffuse costs [or effects] means that those with the most incentive to lobby do so, while those footing the bill or affected way downstream of the decision have very little control over the outcome and not enough benefit to justify trying to lobby. 

We all know that corporations will lobby the government for the most favorable rules they can get. What you haven't identified is how we fix it, other than "we should fix it."

I think it has demonstrated why chains are a better idea than a one off place.  Chains are doing pretty well since last year.
yeah, but chains suck. food almost always sucks at chain places.

a pretzel with cheese was never a main course for a school lunch in Iowa as far as I know.

I did quit wondering about 5 years ago when my youngest graduated

I think most problems such as this are complex.  It's facile to focus blame on ONE cause, usually, when the causes are likely multifaceted, and not simple, else they would have been fixed.  But it's more convenient to see a problem and constantly blame ONE entity, whichever you favor, Dems, Reps, Big Business, Labor Unions, Eastern Michigan, Fox News, NPR, Biden, Trump, illegal immigrants, ...

I know some on FB who blame EVERYTHING on ONE cause, consistently.    Life is rarely that simple.  But it makes us happier to think it is.

I'm not sure why a chain would do better at being competitive in the market than a local spot.

there are some economies of scale, but as we've discussed, a good manager at Outback or Old Chicago can make that particular spot a success, while poor management at the Outback across town or in the next city might suck.

The "good chains" have a System that works and that they enforce religiously with inspections.  They have economies of scale on advertising.  You also usually know what you can expect at a "Crackerbarrel", whereas you don't at "Joe's Diner".  Chains also do surveys on locations where their chain is likely to succeed, and they have Deep Pockets and so can usually survive a Black Swan event.  The private place may have closed up eliminating one competitive option from the area.

My step son in law worked for one of the main Italian chains when he got out of CIA and he recounted the "System" for fixing everything, and how it was quite efficient and competent.  They have test kitchens to keep the menu freshened up also.  The corporate "system" simply can outpace "Joe" diner across the board, which is why we have so many chains now.

I personally avoid them.

Most people (i.e. "the masses") wouldn't know good food if they were forced to consume it "A Clockwork Orange" style...

Places like Seasons 52 and the Lettuce chains are pretty darn good. Definitely exceptions, of course.

Seasons 52 is pretty good, part of the Red Lobster chain (which I once viewed as pretty good also).  I just won't drive out of my way to go there.

It seemed most of the options around us in Cincy were chains, but that was the 'burbs.  Around us here, there aren't many chains at all, there are some mid-upscale places that have 5 or 6 different places collectively with differing themes, like Lure and Ecco and South City Chicken, part of Fifth Group.

We have a place called Sugar Factory which is apparently a chain and very popular with African Americans for some reason.  The menu looks OK, it's regular good, have not tried it yet.  We were out looking for brunch Sunday and traffic was a mess and many many folks were out walking or standing in line for a place to dine at 2 PM.  We ended up at the new Korean Fried Chicken place (Mukja) and got takeout to eat across the street outside.  We try to support the one offs.

We've gone to STK a few times for their happy hour stuff, dinner there gets steep in a hurry, and it's not all that great IMHO.

There is a place called Gun Show I've been trying to get in for weeks now without luck.

True, there are high-end chain restaurants. 

There are also mid-tier chain restaurants that don't completely suck. Heck, Chili's actually seasons their food. It's not tremendously awesome, but at least it has flavor, unlike Applebee's, TGI Fridays, and Chotchkie's.

If the mid-tier chains, I'd probably pick Crackerbarrel because their stuff is pretty simple.
