only tried upscale Mex in tourist spots in resort areas in Cancun, Cabo, Acapulco, Manzanillo,  and  Ixtapa

Yep, that's a "deconstructed" wedge salad. Iceberg/onion/tomato/bacon/blue cheese.

Steak is a ribeye. 

Wine is the "Improv" from Ecluse in Paso Robles.
