Hollandaise I think it is.

Honestly a Hollandaise is a very quick sauce to make. The traditional method takes regular tending (whisking), but it's still quick (<10 min). I read online there's a 1-2 minute blender / food processor version though. 

However, I'd argue that most home cooks aren't going to make Eggs Benedict as a regular weekday breakfast meal. To do it right, you need to cook the Canadian bacon, poach the eggs, toast the muffin, all while making sure you're making a proper Hollandaise which doesn't break. That's a lot of equipment and a lot of hassle.

Really not a difficult cook for a weekend breakfast, though.

That's my point, it's a multimodal breakfast meal, each mode takes a bit of time even multitasking.  On weekends, I often make an omelette for my wife, she likes them, some toast, very quick and easy.  I personally dislike spending 15 minutes to make breakfast, I just don't.

I recognize there are a number of reasons people may eat "breakfast food" for breakfast.

I still always have, and likely always will, prefer breakfast food either for lunch or supper (or, dinner, if "supper" is not fancy enough for you).  I actively crave it then, yet do not crave it at all in the mornings.

I had some leftover hibachi chicken, veggies and fried rice for breakfast today.

Honestly, I rarely crave any foods at "breakfast" time. I'll often go well into the afternoon before I eat anything beyond coffee. Some days I don't eat until dinner.

When I was in grad school, I'd eat a bowl of Total every morning.  I figured it had vitamins.  I'd make two baloney sandwiches for lunch, with only mustard and bread, there were times I'd forget to eat lunch and it would be 5 PM and I'd think about eating them.  I usually had chicken something for dinner, I had a little Hibachi grill.  

On special occasions I'd eat at the S&W Cafeteria at the mall.  That was putting on the hog.
