Spatchcocking is easy.  It's what I do for smoked birds.  It doesn't change the flavor or anything, just cooks faster and more evenly between the light and dark meat.

Toughest part is getting the backbone out.  A set of heavy duty kitchen shears is mandatory.  Or, there's a guy on surlyhorns, who uses his reciprocating saw...

Wow my final guests just left.  We sat out by the fire pit just talking for hours and hours.  What an amazing day.

Also, Cowboys won whilst the Chefs lost.  Twas a good day all around.

Different Thanksgiving this year for me, My daughter cooked her first family thanksgiving dinner.  She had her family, one of her sisters families, and the wife and I over. It was nice not having out house destroyed. LOL. The torch has finally passed.

My wife bought a turkey breast a while back from Trader Joe's and froze it.  It turned out nicely, I over baked to 162°F internal and let it rest a bit.  We were really hungry by that time.  I sauteed some yellow and green squash and she made stuffing, which was just "OK".  She heated microwave mashed potatoes.  We have a lot left.

We had a bottle of Nicolas Feuilatte which is nice.

I didn't nap though I read some books on the couch.  The weather here is sunny which is always nice, but chilly.

Thanx for that "evidence" I told cindy yesterday to not let it go over 155°F Got a new roaster about 5 yrs back and it's really old and very thick.Actually a garage sale find that hadn't/hardly been used - steel with an enamel coating. Any ways it retains heat better and it cooks quicker we've noticed. I have a thermo-pop instant read and it is good/accurate and i open the oven every 30-45 min. to baste the bird. So I popped open the door after 2hr 45 min. and it browned nice and stuck the thermometer in (3 places) and it read 190°F. She wanted to look any way and I said no it was DONE - but she had to check and confirmed my findings.

I told her to check Serious Eats/Alton Brown/Test Kitchen - cook to 150°F and pull it will cook up to 160°F. As it turns out thanx to the time tested gravy made with the giblets and drippings/juices from the pan - it was good.Tomorrow she will take the rest of the meat and into the food processor and make a helluva turkey salad - with relish. As good as any ham or tuna salad IMHO 😎

Stuffing vs Dressing

For me, they're the same thing.  I think my southern family members call it dressing.  But for me, that also means dressing is what they make from scratch vs Stove Top stuffing, which I prefer.

Dressing can be good, but especially as a kid, Stove Top was GREAT.  

Are they synonymous for you guys?  Different/Separate??
